Tête de Moine
Tête de Moine means “Monk’s head”; it is a cylindrical semi-hard cheese and has a very fine dough that melts in your mouth. It is shaved into thing twirly rosette-shaped slices using a knife called “Girolle” or the “Pirouette”. As it is shaved into slices, it alters the structure of the cheese dough, and it helps keep the aromatic flavor, and the melt-in-your-mouth taste develops. Tête de Moine is a great compliment on your next cheese board, as a snack, or dessert.
